Hello, my name is Chef James Canepuccia and I’m the Executive Sous @ 980 Prime at the Chomonix Casino and resort.
My experience with the Mise en Block mostly positive. I actually think it’s a very genius idea and definitely is more tailored to people in the industry. But plastic though?
Without an option to upgrade to metal or, not even metal facets holding it together, just plastic ones just do not fit restaurant industry!!
My experience with this is dropping probably about $1400 worth of knives all over The road at the main entrance to my casino. Besides super embarrassing, definitely have to tie it together if you want to feel secure with it because it will slide off its plastic channel.
I was really excited when this came out because it was finally something with a lot of creativity and thought into it. At least make it where it connects metal so it can lock firmly into place. You guys have a great concept and now is not the time to get cheap.
If it wasn’t at a higher price point for plastic, I would recommend it to all my younger chefs, and everybody I know.
Robo coupe and Vitamix can sell plastic parts at a higher price point because they offer metal ones and, They have already made a name for themselves!
After reading the comments, I realize I’m not crazy. If you guys don’t listen to your Chefs now, you’re not gonna make it.
I really wanna see you guys succeed because I think you have a fucking great concept. Please don’t disappoint and just sell out..

I originally took one look at this product and thought it would be a fantastic way to transport my equipment to-and-from work via motorcycle, but the locking mechanism for the block doesn't give me enough confidence to even try to use it for that purpose. Aside from that, it arrived with a small scuff on the side (see photo) and is larger than I originally thought. The photos on the website do make it seem more compact and less "in the way." All in all, the concept is nice, but I don't think the price tag is valid for a product that is 90% plastic.
This has been a game changer for me. I work as a dayplayer Sous Chef for a film catering company so it is out in the weeds, and cooking for a lot of people. My Knife roll lasted a few days, this still feels brand new
I’ve used it for 2 of my private chef events and it’s a game changer!! Loading and unloading knives and tools are so easy! I absolutely love this addition to my kitchen equipment.
It's easy to carry and looks good. I wish it had something like a grip handle on top, though. I have very small hands and I have to hug it to open or close it because I can't get a firm grip on the top
Took awhile to get in, but def worth the weight
Way larger than I expected and was stoked about it
Holds several large knives and small utensils
The rest of the crew dig it as well
Not only does it hold plenty of tools, but I don't have to worry about edge guards or points sticking through the fabric of a knife roll. I feel secure and safe when carrying, and I know that my tools will stay where they're put.
I love the security of having my tools safe in the hard sturdy case. Additionally, I’ve learned to take only the essentials for the job which has made me more efficient.
I really enjoy the ability to access all my tools without having to open and close a large knife roll for each item, or put all the items I think I will need in a stainless pan to keep my workspace tight. This is great for that. It’s bulkier than a roll but more protective and much easier to use.
Let me start by saying I thoroughly enjoy using my mise en block everyday. I was a little reserved with the wait time and did get weary that it would not ever deliver, not necessarily concerned about the monetary aspect just the fact that I would be missing out on a unique experience for this field. The mise en block is a revolutionary concept that allows you to securely transport your valued kitchen knives plus some. It keeps them out of the elements with its “airtight like” seal. I have only one complaint aside from the shipping process which subsided after I had seen that Chef was packaging and shipping the orders out of his house (mad respect for that by the way). I did not fully understand how large the pro block was. I by no means regret buying it, I just think having an item in the images for the description as a reference would give people a better idea of what they would be caring each day especially people who are commuting to work on foot or public transport. In conclusion, if you have not bought your Mise En Block yet I would strongly advise doing so!
Great concept; however, undersized for my needs. Recommended the Pro to a friend which he ordered. Would love to return mine for the Pro; however, it's listed as backorder. Also believe the shipping time was too long.
Love having all my tools and knives in one place. As a caterer I’m always on the move and the Mise En Block makes organization super easy when it comes to my tools and knives!
